PARDOS- VERDE WHITE

Tranquil, light, fresh and aromatic, it is a farm wine, made by small producers and with carefully selected grapes. It celebrates the Azal grape variety, indigenous to Amarante and crafted with the skill acquired over 200 years. It has aging and aging potential in the bottle. It is an extremely quality wine.

HARVEST REPORT: The harvest date is decided after successive grape tests in the field. In 2023, it was decided by September. Only grapes in excellent condition are harvested, as these are the ones that can give the wines the highest quality. Rotten bunches are left on the vine. The selected grapes are transported to the cellar. They are then pressed gently, without de-stemming or crushing. At this stage, the liquid separates from the must. The wine is then transferred to stainless steel vats with capacities between 1,500L and 10,000L.

VINIFICATION: Fermentation takes place at meticulously controlled temperatures, so that it occurs slowly. Our wine cellar is equipped with powerful refrigeration equipment, which allows this to happen. Without this, it would be impossible to obtain the aromatic capacity that is the house's trademark.

AGEING: The wine rests in stainless steel vats from September until April, the date on which it was considered ready to be bottled.

BOTTLING DATE: Mid-April.

QUANTITY PRODUCED: Less than 30,000 units, between 0.75L bottles and 1.5L magnums .

TASTING NOTES: Bright, straw color with golden reflections. It envelops us in sensations of citrus and tropical fruits. Fruit feels quite fresh. It stands out for the intensity of the fruit on the palate, with very controlled acidity, giving it unique elegance and freshness. Over time, notes of pear and green apple begin to emerge, confirming its aging potential.

PARDOS-VERDE RED

The tradition of Verde Red has its maximum exponent in PARDOS Red. Production is extremely limited. A fresh wine, with an open color and an aroma that will not leave any lover of Red Verde indifferent.

STYLE: Vibrant, lightly crimped

HARVEST REPORT: The harvest date is decided after successive grape tests in the field. In 2023, it was decided by September. VINIFICATION: Once arrived at the winery, the grapes begin by being de-stemmed. Then, they go to presses where they are trodden on foot by the harvesters. The mills are also refrigerated, which allows fermentation to occur slowly. The nectar is kept in skin contact for a few days, extracting aromas, tannins and color to the point considered optimal. The wine then goes to storage and rests in stainless steel vats for many months.

QUANTITY PRODUCED: Very limited. Less than 5,000 units of 0.75L.

TASTING NOTES: Slightly open ruby ​​color. Great vivacity and freshness. Some vanilla on the nose, where red fruits, black fruit, currants and freshly cut grass stand out. There is something floral that stands out in the deeper aromas. A wine with vast complexity of polished and refined aromas.
